Sometimes you feel heartbroken. The more people try to cheer up, the worse you feel. Here I show you how to make a basic salad from scratch with a home made dressing. The salad comes with a twist. It says it’s ok to not be ok. So back off. It would be fun to serve this salad without saying anything to see if people would comment on the not so subtle hint.
For dramatic effect I bought tooth picks that look like swords. Thinking that it would make the piercing through the heart effect look more dramatic. But honestly the plain wooden tooth picks looked better. It looked like a vampire heart getting stabbed by a stake. So if you make this salad, use the plain Jane tooth picks and don’t try to be fancy like me.
My husband told me that the salad would be improved if I added some red sauce so that it would look like blood was exploding out of each heart. I thought his idea too gory. It might look more impressive, but then who would want to eat it? Not me. This is the same man who refused to eat Snake Pizza because it looked too creepy, until I cut it up into pieces and only then he agreed to partake.
Dressing:
1 tablespoon balsamic vinegar
2 tablespoons of olive oil
1 tablespoon Dijon mustard
salt and pepper
Lettuce
green onions
carrot
yellow pepper
cucumber
beet
Brush the beet with olive oil. Cover with foil and bake for 45 minutes on 400.
Wash the lettuce and dry. The cutup into bite size pieces.
Peel and shave the carrot
Chop cucumber
Chop green onion
Toss everything together.
Mix all the dressing ingredients and add to salad right before serving.
Slice the beet and using a heart shape cookie cutter cut out several heart shapes.
Place a tooth pick through each heart.
Place hearts on top of the salad and serve.
