While writing a novel (Graffiti Hack) I had to come up with a unique eggplant recipe to fit into the plot. I spent months and months experimenting in the kitchen to come up with the perfect recipe match to my story. This in a roasted eggplant recipe that came out of that phase. I call it my crazy eggplant phase. This is not the recipe that ended up in the novel. However it is easy to make, my family and friends love it and it is both delicious and healthy. I feel rather proud to have invented something myself. I hope you enjoy it.
Roasted Eggplant Wedges Recipe:
Mix all the following:
1 can of tomato paste
1/2 cup of olive oil
2 minced garlic cloves
chopped dill
1 table spoon of hot sauce
salt and pepper.
Cut two large eggplants length wise into 4 or 5 wedges. Place tomato mixture on each wedge. Place all wedges onto baking dish. Bake for 45 minutes on 400. You can eat it both hot or cold.
That is all. Isn’t that easy? The best part is how delicious they are. These taste so good, they will make you want to dance. Everybody will be impressed. They will think you have slaved in the kitchen for hours when really wit was no big deal.
