While writing a novel (Graffiti Hack) I had to come up with a unique eggplant recipe to fit into the plot. I spent months and months experimenting in the kitchen to come up with the perfect recipe match to my story. This in a roasted eggplant recipe that came out of that phase. It is not the recipe that I ended up in the novel. However it is easy to make, my family and friends love it and it is both delicious and healthy. I feel rather proud to have invented something myself. I hope you enjoy it.

Roasted Eggplant Recipe:
Mix all the following:

1 can of tomato paste
1/2 cup of olive oil
2 minced garlic cloves
chopped dill
1 table spoon of hot sauce
salt and pepper.

Cut two large eggplants length wise into 4 or 5 wedges. Place tomato mixture on each wedge. Place all wedges onto backing dish. Bake for 45 minutes on 400. You can eat it both hot or cold.
